How to Make Mapillai Samba Flakes

Ingredients:

• 1 cup Mapillai Samba flakes.
• 1 onion, finely chopped
• 1 green chili, chopped
• 1 carrot, finely chopped
• 1 tbsp oil
• 1 tsp mustard seeds.
• 1 tsp urad dal (Split Black Gram)
• A few curry leaves.
• 1 tsp grated ginger.
• ½ tsp turmeric powder.
• Salt to taste.
• Lemon Juice (Optional)
• Fresh coriander for garnish.

Instructions:

1. Rinse the mapillai samba flakes in water, drain and set aside.
2. Heat oil in a pan, add mustard seeds, and let them splutter. Then add urad dal, curry leaves, and grated ginger.
3. Add chopped onion, green chilli, and carrot, and sauté until soft.
4. Add turmeric powder and salt, and mix well.
5. Stir in the rinsed Mapillai Samba flakes and cook for 3-5 minutes until the flakes absorb the flavors.
6. Optionally, sprinkle lemon juice before serving and garnish with fresh coriander.
7. Enjoy this healthy upma for breakfast or as a light snack.
